After more investigations on the forum, it appear the subject is known. It is linked with the Video Toolbox hardware acceleration. Unchecking it solves my issue.
I would advise to get some details about this in the description of the options, because this subject becomes a real problem for OLED users (due to the poor handeling of above black levels).
